Sesame Ginger Chicken Pineapple Skewers

This is an appetizer. Can double the recipe for a dinner for 4 people

1 lb. Chicken Breast Or Thighs

1/2 Cup Pineapple Chunks

1/2 Red Bell Pepper

1 cup Juli's Sesame Ginger (1/2 for marinating, 1/2 for dipping)

1 Tablespoon Rough Chopped Cilantro

Cut chicken into bite size pieces

Cut peppers and pineapple into similar size pieces...squares

Marinate chicken in a dish or bag for 1 to 2 hours. Then skewer chicken alternating pineapple and pepper and a medium grill for 3 to 5 minutes per side five minutes if using chicken thighs 5 minutes per side if using chicken breast 3. Serve with a bowl of sesame ginger dressing with cilantro as a dipping sauce.

Vegetarian Option: Replace chicken with Portobello mushroom chunks, marinate all veg/fruit in a bag or dish for 1-2 hours and grill for 2-3 minutes per side.
